The Recipe for a Perfect, Whole Foods Vegan Soy-Free Soybean Salad with Tofu and Sweet Potato This is the recipe for a delicious, gluten-free, soy-friendly, and nut-free vegan soy-based salad.
It’s made with a mix of tofu, sweet potatoes, and lentils, and it’s a delicious way to go with your favorite vegan soup.
The Ingredients to Get You Started: 1 package tofu, peeled and cut into 4 equal pieces 1 can (4 ounces) sweet potato, peeled, diced 1 cup water 1/4 cup soy sauce 1/2 cup sugar 1/3 cup dried oregano 1/8 teaspoon salt (or more to taste) 1/6 teaspoon ground cumin 1/12 teaspoon cayenne pepper 1/10 teaspoon ground cloves 1/5 teaspoon salt and freshly ground black pepper Directions: Heat a skillet or grill over medium heat.
Add tofu and cook until browned, about 10 minutes.
Remove tofu to a bowl and set aside.
Add water, soy sauce, sugar, oreganos, salt, cayennes pepper, cumin, cilantro, and garlic to a large bowl.
Whisk together until combined.
Add the tofu mixture to the bowl with sweet potatoes.
Stir in soy sauce and sugar.
Pour in the water mixture and stir well to combine.
Add in the lentils and soy sauce mixture and fold into the tofu, stirring well to make sure that the lentil mixture is evenly distributed.
Add salt and caynes pepper to taste.
Place the tofu in the grill, and cook for about 8-10 minutes, stirring often to keep the tofu from sticking.
Serve immediately, or refrigerate in an airtight container until ready to use.
